LPK Budi Mulia Dua Culinary School bersama dengan Direktorat Kursus dan Pelatihan, Direktorat Jenderal Vokasi dan Kementerian Pendidikan dan Kebudayaan RI menyelenggarakan Program Kecakapan Wirausaha (PKW) platinum 2023. Pelatihan ini fokus bidang jasa usaha makanan (street food).
"Bisnis kuliner adalah bisnis yang menjanjikan, prinsipnya selama manusia masih hodup mesti masih butuh makanan," ujar Pimpinan LPK Budi Mulia Dua Culinary School Ani Syafaatun, Selasa (19/9/2023).
Ani mengatakan, output dari pelatihan tersebut dapat melahirkan wirausaha, khususnya katering hingga outlet street food. Menurutnya peluang DIY sebagai daerah tujuan wisata dapat ditangkap peluang kebutuhan kulinernya.
"Apalagi kuliner jadi pemasok devisa negara selain non migas, di Jogja juga demikian. Program ini lebih pendek, jadi lebih bisa, yang bisa dijangkau. Peluang bisnis lebih marak bikin street food di tempat wisata misalnya," jelasnya.
Sementara itu, Kepala Dinas Pendidikan Kabupaten Sleman Ery Widaryana mengatakan, pelatihan kewirausahaan bisnis kuliner dinilai sangat penting. Apalagi, kondisi saat ini, lapangan pekerjaan terbatas namun pertumbuhan penduduk terus terjadi.
"Sehingga pendidikan, baik formal non formal dan kewirausahaan harus menjadi hal yang penting. Karena kita berharap semakin banyak warga negara Indonesia punya kecakapan wirausaha, dapat menguatkan ekonomi kita," jelasnya.
Ery berharap setelah program selesai, maka setiap orang dapat menangkap peluang menjadi wirausaha. Kemudian bisa menbembangkan ekonomi di wilayahnya masing-masing.
Setidaknya ada 30 peserta yang mengikuti program tersebut. Mereka berasal dari lima kabupaten dan kota di DIY. Ada pun materi yang diberikan meliputi kewirausahaan, management catering, digital marketing, dan food photography.
Selain itu juga ada praktek menu street food, bussines plan, final project, dan pameran. Pengajar merupakan praktisi maupun dosen yang sudah mumpuni di bidangnya. (lan)

Kediri (ANTARA) - Pemerintah Kota Kediri, Jawa Timur, menggelar Street Food Festival Explorasa 2023 sebagai bentuk dukungan pada berbagai produk jajanan dan makanan lokal sehingga produk UMKM tersebut bisa lebih dikenal.
Ketua TP PKK Kota Kediri Ferry Silviana Abu Bakar mengemukakan kegiatan Street Food Festival Explorasa 2023 ini agar masyarakat bisa menikmati berbagai jenis makanan yang disediakan di lokasi ini. Acara ini juga bagian dari memperingati Hari Jadi Ke-1144 Kota Kediri.
"Senang sekali di Balai Kota Kediri ada teman-teman UMKM. Teman-teman bisa mempromosikan jajanan dan makanan yang dibuat pada acara ini. Ada pula teman-teman yang mengikuti lomba masak nasi goreng," katanya di Kediri, Sabtu.
Bunda Fey, sapaan akrabnya itu, juga mengatakan kegiatan ini berbeda dengan festival lainnya. Terdapat kompetisi memasak yang spesifik memasak nasi goreng arang. Hal ini dipilih karena nasi goreng arang menjadi salah satu destinasi wisata kuliner yang sering dituju wisatawan.
"Kami ingin kuliner Kota Kediri ini terus eksis. Dengan banyaknya fast food yang muncul maka kami terus memperkenalkan makanan khas Kota Kediri," kata dia.
Ia menambahkan kegiatan ini merupakan dukungan nyata Pemerintah Kota Kediri untuk jajanan dan makanan lokal. Dengan kegiatan ini, diharapkan berbagai makanan dan jajanan lokal bisa lebih dikenal. Selain itu, omzet UMKM pun bisa lebih meningkat setelah mengikuti acara yang berlangsung hingga Sabtu malam tersebut.
"Semoga acara seperti ini terus ada. Makanan lokal ini kan bagian dari budaya. Kalau tidak dikenalkan terus takutnya nanti tidak ada yang meneruskan," kata dia.
Dalam Street Food Festival Explorasa 2023 ini, terdapat 38 stan makanan UMKM. Acara ini digelar di halaman Balai Kota Kediri. Berbagai kegiatan juga digelar seperti lomba masak kreasi nasi goreng arang, lomba Instagram Reels, demo masak dari Chef Ragil dan music performance.
Pada lomba masak kreasi nasi goreng arang tersebut diikuti 12 peserta. Terdapat tiga juri yang menilai yakni, Ketua TP PKK, koki nasional yakni Chef Ragil, dan Chef Agung dari Insumo.
Wali Kota Kediri Abdullah Abu Bakar juga mengajak masyarakat untuk hadir di Street Food Explorasa 2023. Berbagai makanan dan jajanan tersedia dalam acara ini.
"Silakan datang ke sini bersama teman atau keluarga. Banyak makanan dan jajanan Kota Kediri yang enak di sini," ujarnya.

Penjual memasak makanan tanpa memakai sarung tangan, menerima uang dengan tangan yang sama dan membiarkannya tergeletak di tempat terbuka.

Dikutip dari Hindustan Times (4/5/2007), Kementerian Pertanian India pada saat itu mengungkapkan sebanyak 85 persen makanan terkontaminasi ditemukan pada jajanan kaki lima Kolkata dan daerah lain di India.
Komite juga menyatakan jajanan kaki lima di India tidak mengutamakan kebersihan dan keamanan.
Sementara itu, Asosiasi Kesehatan Masyarakat setempat menyebut hanya 53 persen orang India mencuci tangan dengan sabun setelah buang air besar.
Sebanyak 38 persen cuci tangan sebelum makan dan hanya 30 persen yang cuci tangan sebelum memasak.
Akibatnya, bakteri E-coli, salmonella, shigella, staphylococcus aureus, dan pseudomonas berpotensi terkontaminasi dalam makanan.
Bakteri ini dapat memicu masalah pencernaan, seperti diare, tipus, keracunan makanan, infeksi saluran kemih, dan pneumonia.
Di sisi lain, pedagang kaki lima yang harus bersaing mencari konsumen dari restauran kesulitan menerapkan kebersihan dalam makanan jualannya.
Alat masak tidak higienis
Penelitian yang dibuat oleh Hygiene Council dan Reckitt Benckiser, dikutip dari The Hindu Business Line (15/11/2012), mengungkapkan kain yang digunakan mengelap kotoran saat memasak sebagai benda terkotor.
Sementara, telenan, pisau, serta buah dan sayur yang tidak dicuci juga termasuk barang yang kotor bahkan berpotensi terkontaminasi.
Kondisi tersebut disayangkan karena pemerintah India melihat jajanan kaki lima sebagai makanan lokal dan eksotik yang bisa menjadi daya tarik wisata.

Kare tadi dikemas dalam kantong plastik, sedangkan rotinya dibungkus dengan kertas koran lokal.
Hasil pengujian menunjukkan makanan tersebut tidak mengandung bakteri dan aman dikonsumsi meskipun hampir mendekati batas keamanan pangan.
Namun perlu dicatat, pengujian ini tidak mengetes kondisi udara, bungkus masakan, atau alat masaknya.

Atas kondisi tersebut, Kementerian Kesehatan serta Kementerian Perumahan dan Urusan Perkotaan India mendorong pemerintah daerah mengembangkan 100 penjual jajanan yang higienis di 100 wilayah seluruh negeri.
Diberitakan NDTV Food (214/2023), pemerintah pusat memberikan bantuan dana bagi setiap penjual agar membuat makanan yang higienis dan aman.
Program pelatihan masak, penilaian kebersihan dari pihak ketiga, dan sertifikasi pengolahan masakan juga diadakan untuk mengatasi hal ini.
Meski praktik keamanan pangan terus dijalankan di India, turis juga perlu tahu cara memilih makanan yang aman saat berkunjung ke negara tersebut.

Bertempat di Balai Kota Kota Kedirijajanan hingga makanan berjajar rapi di stand-stand yang sudah disediakan. Acara ini memperingati Hari Jadi Kota Kediri ke-1144.
Tak hanya 38 stand makanan UMKM, ada pula lomba masak kreasi nasi goreng arang, lomba Instagram Reels, demo masak dari Chef Ragil dan music performance.
Pada lomba masak kreasi nasi goreng arang, diikuti 12 peserta. Ada 3 juri yang menilai yakni, Ketua TP PKK, Chef Nasional yakni Chef Ragil, dan Chef Agung dari Insumo.
"Senang sekali di Balai Kota Kediri ada teman-teman UMKM. Teman-teman bisa mempromosikan jajanan dan makanan yang dibuat pada acara ini. Ada pula teman-teman yang mengikuti lomba masak nasi goreng," ujarnya.
Wanita yang akrab disapa Bunda Fey ini menerangkan bahwa di Explorasa tahun ini berbeda dari tahun sebelumnya.
Dimana untuk lomba spesifik lomba masak nasi goreng areng.
Hal ini dipilih karena nasi goreng areng menjadi salah satu destinasi wisata kuliner yang sering dituju wisatawan.
"Kita ingin kuliner Kota Kediri ini terus eksis. Dengan banyaknya fast food yang muncul maka kita harus terus memperkenalkan makanan khas Kota Kediri," ungkapnya.
