TROY, N.Y. — Troy’s newest bar, The Fox and The Burn, is ready to host creative events and contribute to the city’s vibrant and quirky culture.
“Troy is so fun and quirky and open-minded. I’m excited to add to that culture,” co-owner David Camacho said.
“I’m looking at all the great things going on in downtown Troy and asking, ‘What can I do that isn’t already happening here?’” Camacho added.
The Fox and The Burn is located in River Street Market, a premier food hall on the first floor of 433 River St., which is also home to Troy City Hall on the fifth floor.
The Fox and The Burn join six other restaurants in the hall: Hummicidal, also owned by Camacho; Papa Cicco’s Pinsa Romana; Maria’s; Prime Burger and Shakehouse; and Taco Libre.
A Lansingburgh native, Camacho had his first experience working in restaurants washing dishes as a teenager at Happy Lunch, a bar and restaurant in Troy’s North Central neighborhood owned by Camacho’s uncle Roberto Borrero Sr. Camacho went on to earn a bachelor’s of science in biochemistry at University at Albany while working in restaurants, and eventually realized he was a better fit for the hospitality industry.
“It’s all about the people — making people happy and helping everyone have a good time,” Camacho explained.
Camacho helped open Garlic Lover’s Corner, a restaurant in North Greenbush, where he worked as a server/bartender for several years. Working to help launch that restaurant in 2006 gave him the confidence to establish his own restaurant.
“Helping them develop a system, seeing it grow and flourish, made me feel ready to open a place of my own,” Camacho noted.
In 2011, he opened Risotto in Loudon Plaza in Albany, a casual bistro serving Italian-Mediterranean fare, global tapas, and burgers.
Hannah Van Buren, general manager at Risotto, is a co-owner of The Fox and the Burn where patrons will find her tending bar when Camacho isn’t behind the sticks.
The Fox and The Burn are developing a wings and pizza menu. Hummicidal, also owned by Camacho, is located directly next to the bar and serves pitas, build-your-own hummus plates, and dessert hummus. Guests are also welcome to order food from other River Street Market restaurants and enjoy it at the bar.
The open layout of the River Street Market offers a perfect space for special events and group activities, said Camacho, adding that he plans to take advantage of that unique setup.
“Troy is a special place, with a genuine character. There’s nothing generic about it,” Camacho said.
“There’s also some healthy one-upmanship among establishments for who can come up with the most clever event and entertainment. And when you put in that effort, the people appreciate and reward it with their business,” Camacho continued.
Camacho noted he’s ready for The Fox and The Burn to become a part of the Troy “scene,” which includes supporting, collaborating, coordinating with other businesses in the city.
“The Utica Club Corridor”
One of Camacho’s first efforts at a quirky collaboration will be a Utica Club Bar Crawl on Wed. Oct. 13. The low-key, guided pub crawl will start at The Fox and the Burn at 5 p.m. before continuing along what Camacho has dubbed Troy’s “Utica Club Corridor,” a string of five bars that also sell that legendary Upstate New York pilsner-lager. The other four stops will include: Ryan’s Wake Public House, The Bradley, Whiskey Pickle, and McCaddy’s Pub.
“Utica Club is a classic beer with a dedicated fanbase,” Camacho said.
“I realized there are five downtown bars all within walking distance that serve ‘UC’ so I figure we should have some fun with that while cross-promoting our businesses,” Camacho continued.
After the debut “crawl,” Camacho said he hopes that patrons will repeat the crawl whenever they feel like it.
Halloween Bash in the City Hall “Catacombs”
Camacho is also planning a free Halloween party with live music by Ill Funk on Oct. 30, located in the City Hall “catacombs” (the parking garage level) of 433 River St. Guests will be able to enter from River Street Market and take the elevator down to the garage, or they can enter through the overhanging doors from the newly completed seawall promenade along the backside of the building.
“Troy loves to host events in unconventional spaces in our historic buildings and the ground-level parking garage in this building is going to blow people’s minds when they see it transformed into a Halloween catacombs party spot,” Camacho said.
Again, Camacho is working to cross-promote two other free Halloween parties happening nearby, “The Haunted Bradley” at The Bradley, and “Haakoween,” a block party on Fulton Street hosted by The Whiskey Pickle.
“Troy is the place to be on Halloween with three free parties all within walking distance from each other,” Camacho said. “It’s going to be perfect for people who want to show off their costumes and bounce around this city to see what we have to offer.”
Take City Hall!
True to its nature, Troy is the only Capital Region city with a bar in the same building as City Hall. Naturally, Camacho has plans for discounts and specials to make visits to City Hall more enjoyable — like perks for showing proof that one has just paid or reduced a parking ticket, or a Honeymoon Happy Hour for couples who tie the knot in City Hall.
What’s In A Name?
The bar’s name came from a tune Camacho’s five-year-old sang one day. Camacho had the ditty stuck in his head, but when he tried to look up a song called “The Fox and The Burn,” he couldn’t find anything. As far as he knows, his son made up the song.
Camacho thought the phrase sounded like a traditional pub name or an Æsop-style fable. He has an open invitation to the general public to conjure up a story about The Fox and The Burn and share it with him or his staff, noting that a good yarn will be rewarded.
Brunch Soon
The Fox and The Burn will be starting brunch on Saturday, Oct. 23, from 10 a.m. to 2 p.m., featuring favorites from sister restaurant Rissoto, including: variations of Eggs Benedict, Chicken, and Waffles and drink specials like bottomless mimosas.
Hours
The Fox and The Burn is open Wednesdays through Fridays from 11 a.m. till close and Saturdays from 4 p.m. till close. There are front and rear entrances to River Street Market, with ample free parking on the side and front of the building.
