Back in early March, despite many challenges, Robyn Goyette realized a dream she has had for many years. Goyette opened Uncle Bubby’s Deli on Main Street across the street from City Hall and in sight of Sandy Creek Park.
The business is already developing repeat customers and the future looks bright for Jasper’s newest eatery.
Goyette was born in Southeast Texas but moved to and lived in California during her younger years.
“I always loved family gatherings and I love to feed people, so this restaurant is my dream,” she said.
She told the Newsboy that the name Uncle Bubby is to honor her father and the deli is her attempt to bring something different to diners in Jasper. Her specialty is a sandwich called the “Tri Tip,” which is made from sirloin steak is barbecued over an open flame red oak fire pit to bring out the flavor she calls “Santa Maria Style BBQ.”
She has plenty of other items on the menu made fresh daily, including potato salad, macaroni salad and cole slaw. She said the deli boasts a sizable salad bar, and she is proud that ingredients are maintained fresh during business hours. She even has a menu offering that could remind you a bit of home — a fried bologna sandwich.
Goyette said the location near the park is a great setting for the restaurant and that her frozen yogurt should be a big hit with people who come to enjoy the park and then need something cold and sweet.
“We have outdoor seating so people can enjoy this beautiful setting, and I feel in some ways that we are just an extension of the park,” Goyette said.
She said that business has been good and repeat customers are becoming regulars.
“Everything we do is homemade with love,” she said.
